Ok, the picture definitely does not show how scrummy these cookies are.
My husband and daughter went to a supermarket and bought home a bag of raisin and oat cookies. She chose these ones saying to my husband “these are healthy cos they have raisins in”. Obviously, I take that as a challenge to prove her wrong!! So these came about from ingredients I had laying about it the cupboards. Blueberries were used as they were nearing the end of their life in my fridge. You could always use raisins or, you know, chocolate chips 😉
50g coconut oil or low fat spread
75g dark brown sugar
1/2 tsp vanilla essence
70g plain flour
1/4 tsp baking powder
How to make:
In a bowl combine coconut oil (or spread) with flour, egg, baking powder, vanilla, & sugar, mix well.
Fold in the oats and blueberries.
Cover the bowl and place in fridge for at least 20 mins to form a cookie dough texture.
Pre-heat oven to 180°c/350°f/gas mark 4
Line a baking tray with grease proof paper.
Roll cookie dough into 12 individual balls and bake in oven for around 12/15 mins.
Allow to cool on a wire rack.
