We are massive pasta fans in our house and this dish is always demolished!
You can add spinach as well to add a bit of iron 💪
Cooked chicken breast
Pasta (I’ve used fresh multi-grain tagliatelle)
3 cloves of garlic
250ml chicken stock
60g low fat soft cheese
How to cook:
Fry off mushrooms, garlic and shallots in frylight until golden.
Add chicken stock and simmer for approx 10/15 mins
In a seperate pan bring water to the boil and add pasta
When pasta is almost cooked, whisk the low fat soft cheese into the stock and mushrooms, then add cooked chicken and pasta.
If required add a couple of tablespoons of the cooking water from the pasta to loosen.
Serve with parsley to make it look pretty 😉
