Egg muffins

 

Simple to do. And handy to have in the fridge to enjoy cold or re-heated. This makes 6.

 

Spray muffin tray with low fat cooking spray and pre-heat oven.

Dry fry some veg. Whatever you have, mushrooms, peppers, onions, courgettes etc.

Whisk 4 eggs with a splash of skimmed milk. Pour into muffin tray and add pre-cooked veg. If you wanted, now would be the time to add tomatoes, spinach or low fat cheese.

Season and bake in oven for approx 15 – 20 mins.
